First, let’s get this out of the way. This is in no way a manifesto against the traditional bagel. I LOVE a bagel, but I am on in the business of making bagels from scratch. My patience and hunger don’t want to wait for the yeast to rise! Also as a gluten-free girly, it’s tough to find a great gluten free bagel. As a mom over 40, I want to find ways to add more protein to my diet. These gluten free cottage cheese bagels have 14 grams of protein each. In comparison, a regular bagel has about 4 grams. This gluten free cottage cheese bagel recipe are yeast-free and SUPER easy to make. You’ll have warm “bagels” on the table in about 35 minutes.

When you’re living the gluten-free life, there are a few items that are very difficult to replicate. Bagels are definitely difficult to replicate! You can always purchase gluten free bagels from the grocery store but these gluten-free cottage cheese bagels are chewier, higher in protein and can be customized to the flavors you love.

Cottage Cheese: I recommend using a 4% fat cottage cheese for this recipe. My favorite brand is Good Culture, but as you can see from the ingredients photo, I wasn’t able to get any on the day I photographed this recipe!
Baking Powder: Any baking powder will do but make sure it is labeled as “gluten free.” Not all baking powders are gluten free.
Gluten Free Bread Flour: King Arthur is my absolute favorite gluten free flour for baking. For the recipe you’ll want to get the “Bread Flour.” There are other gluten free bread flours out there so feel free to use what you have. They will also work for this.

Are Cottage Cheese Bagels Healthy?
I calculated the nutrition information using MyFitness Pal. The results estimate the following: 235 calories, 5 g fat, 37g carbs, 13.5g of protein. These gluten-free cottage cheese bagels are not low-carb. However, they have three times more protein than most store-bought gluten-free bagels. Depending on your dietary needs, these bagels can be a great option for a protein packed breakfast or snack.
Storage, Freezing & Reheating Instructions
These gluten free cottage cheese bagels are perfect meal prep and storing to eat later! Place any leftover bagels in a zip top storage bag. They will keep well for 2 days on the counter. If you wnat to keep them longer, place in the freezer. When you’re ready to eat, wrap in foil and reheat in your oven or air fryer.
FAQs About Gluten-Free Cottage Cheese Bagel
- Can I taste the cottage cheese? : No! The cottage cheese lends great flavor but these are not overlay “cottage cheesy.” I suppose this could depend on what brand you use, but I would not worry about these tasting like a mouthful cottage cheese.
- Can I make these dairy-free? I haven’t experimented with dairy-free alternatives for this recipe. Since cottage cheese is the star of the show, this may be a tricky one to tackle without dairy.
- Are these keto or low-carb? These don’t meet the standards for keto or low carb.
- Can I use Greek yogurt instead? Ooooh!!! This is an interested idea! I think this would work GREAT with greek yogurt! I recommend using a 5% fat or higher to keep the fat content about the same.
- Why is my dough sticky? Depending on your climate/humidity – your dough may need a little more flour to come together. Sprinkle in a bit at a time while working the dough until it comes together and feels less sticky.

- Preheat oven to 375 degrees and line a baking sheet with parchment
- In your blender, blend cottage cheese until smooth, then transfer to a bowl
- Add the rest of the ingredients to the smooth cottage cheese and mix with a rubber spatula until dough forms.
- Dump dough onto a floured surface and work until a ball forms
- Use a pastry cutter or knife to divide dough into 6 equal portions.
- Roll portions into balls. Use your finger to create a hole in the center and then shape into bagels.
- Bake at 375 for 25 minutes.
- Remove from oven and allow to cool for 5 minutes
- Mix 1 egg and 2 tablespoons of water to create an egg wash
- Brush the bagel tops with egg wash and sprinkle generously with Everything But the Bagel Seasoning. You can also sprinkle with another topping of your choice at this stage. (e.g. cinnamon sugar, salt)
