Preheat oven to 375 degrees and line a baking sheet with parchment
In your blender, blend cottage cheese until smooth, then transfer to a bowl
Add the rest of the ingredients to the smooth cottage cheese and mix with a rubber spatula until dough forms.
Dump dough onto a floured surface and work until a ball forms
Use a pastry cutter or knife to divide dough into 6 equal portions.
Roll portions into balls. Use your finger to create a hole in the center and then shape into bagels.
Bake at 375 for 25 minutes.
Remove from oven and allow to cool for 5 minutes
Mix 1 egg and 2 tablespoons of water to create an egg wash
Brush the bagel tops with egg wash and sprinkle generously with Everything But the Bagel Seasoning. You can also sprinkle with another topping of your choice at this stage. (e.g. cinnamon sugar, salt)
