Gluten Free Cottage Cheese Bagels

Ingredients
  

  • 16 oz 4% Fat Cottage Cheese
  • 2 C King Arthur Gluten Free Bread Flour
  • 4 tsp Baking Powder
  • 3 eggs (reserve one egg for egg wash)
  • 1 tsp garlic powder (optional)
  • 2 tsp Kosher salt
  • Everything but the Bagel Seasoning or other topping of your choice (e.g. cinnamon sugar)

  • Blender
  • Pastry Cutter optional

Method
 

  1. Preheat oven to 375 degrees and line a baking sheet with parchment
  2. In your blender, blend cottage cheese until smooth, then transfer to a bowl
  3. Add the rest of the ingredients to the smooth cottage cheese and mix with a rubber spatula until dough forms.
  4. Dump dough onto a floured surface and work until a ball forms
  5. Use a pastry cutter or knife to divide dough into 6 equal portions.
  6. Roll portions into balls. Use your finger to create a hole in the center and then shape into bagels.
  7. Bake at 375 for 25 minutes.
  8. Remove from oven and allow to cool for 5 minutes
  9. Mix 1 egg and 2 tablespoons of water to create an egg wash
  10. Brush the bagel tops with egg wash and sprinkle generously with Everything But the Bagel Seasoning. You can also sprinkle with another topping of your choice at this stage. (e.g. cinnamon sugar, salt)
